Alphonso Mango No. 11Each year we bring together unusual, incredible combinations of ingredients to produce special single-batch spirits. This year's is no exception. It is our delight to introduce Alphonso Mango No. 11. Mangoes Like No OtherWe had heard stories about a particular variety of mango from India called the Alphonso mango. Claimed as the king of mangoes for their incredible taste, and superior to all other mangoes, we were quite curious. Last year (2007) was the first year these mangoes were available in the United States and we sought them out. It was well worth the effort. Alphonso Mangoes are amazing. Smaller in size than other mangoes, they are juicy and incredibly sweet. Even the taste is different from other mangoes with its peach-like quality. They have a very short growing season, and shelf life, so they are very delicate. After experimenting with different combinations of spirits and botanicals, we found that this fruit matched perfectly with our Distiller's Gin No. 11. Producing The SpiritEach mango was hand peeled, pitted and sliced before being placed in a 155 proof version of the gin. After several weeks, the fruit was then removed and all of the liquid in the fruit was pressed out with a small grape press. After trying the new spirit at different levels of proof, we found the flavors to be best at 75 proof (37.5% alcohol). The color and flavor of Alphonso Mango No. 11 comes solely from the mangoes and the gin. No flavorings, extracts or sweeteners were used. Most bottles will have a bit of pulp from the fruit, so it is perfectly natural to see sediment. We found if we filtered it all out, we lost some of the rich mango flavors. So instead, we left it in - just shake the bottle before pouring to intensify the mango flavor of your cocktail. Tasting Notes & RecipesWhen you first smell this spirit the mango aroma floods your senses. Then other botanicals fill in underneath providing a full, inviting bouquet. At first sip, you'll taste fresh, sweet mango, followed softly by dry spice and sweetness. The sweetness will linger, fading back to a fresh mango flavor with a touch of spiciness. We recommend trying this spirit over one ice cube, which allows the fresh mango flavor to really shine. This spirit is great on the rocks or with a simple splash of soda and a couple of muddled strawberries. We've developed some other great recipes for Alphonso Mango No. 11 also.
